WINE TANNINS

 

In the wine-making sector, wine tannins have now become very important thanks to their many technological properties. They are natural components of grapes and their properties are an essential stabilising tool for the colour and maturing of great red wines. The use of exogenous tannins at wineries has therefore played a decisive role. Alongside the main function of tannins in wine linked to colour stabilisation, another function is as a preservative, also acting as antibacterial agents, protecting the wine and ensuring its longevity.

 

WINE TANNINS FROM THE AEB RANGE: GALLOTANNINS, ELLAGITANNINS AND COMPLEX TANNINS

 

The wine tannins in the AEB range have various functions which help wine producers to achieve their end goal. Among the various solutions we offer, we have developed a tannin to stop Botrytis cinerea, Fermotan Antibotrytis, which involves a combination of ellagitannins and proanthocyanidins that can block the effect of this fungal parasite.

Our many high-tech processing aid formulas made from ellagitannins, proanthocyanidins and gallotannins guarantee: colour stabilisation for red and rosé wines during fermentation; they can re-establish the right anthocyanin-tannin balance; improve the bouquet and structure; reduce maturing times in barrique barrels; effectively stop free radicals that oxidise the aroma and they can reduce astringency.

In terms of making white wine, we have created Fermotan Special B, a tannin for high-quality white wines, which can considerably improve the freshness of the wine thanks to its antioxidant effect. Furthermore, thanks to a special innovative preparation system, the blends of tannins developed by our Research and Development laboratories guarantee the perfect homogenisation for the mass and stabilisation of the solution over time, as well as easy use and dosing.
