Enzymes are proteins that are found everywhere in nature – in all living things, in saliva and digestive systems. Their purpose is to catalyse biochemical reactions. Each enzyme is made up of long amino acid chains folded together into a distinct shape - this shape gives an enzyme specificity for a particular reaction.
Did you know that the molecule an enzyme acts upon, known as the substrate, usually gives the enzyme its name? For example, a ß-glucanase acts on ß-glucans.
