Only founded in 2021, Crow & Wolf is based in Fresno, which lies right in the middle of California’s Central Valley. The region is known as the agricultural heart of the state, and it is collaboration with local producers of their raw materials that inspires the team there.
Head Brewer, Brad Gains, takes those local ingredients and attempts to come up with “a beverage for everyone”, in fact he wants people to have a choice, so he tries to come up with two beverages for everyone. Recently in receipt of their wine license, relative youngsters Crow & Wolf can now brew seltzers, ciders and non-malt sugar fermentations. So, with no fewer than twenty-one beers, hard seltzers, meads and even a slushy in the recipe book, Crow & Wolf’s Creative Collab is based on AEB’s reliable and quick comeback to the technical questions that such product diversity will inevitably throw up.
A great all round yeast for a wide range of ‘American’ styles, FERMOALE AY4 has high flocculation and apparent attenuation and gives a great malt to ester balance.
