Colloidal haze, or non-biological haze, is caused by a series of reactions that bond proteins with polyphenols (tannins). These protein-polyphenol complexes precipitate as the beer is chilled (chill haze) while others form clumps or ‘floaties’ (permanent haze) in the finished beer.

Malt, adjuncts and hops contribute to the overall amount of proteins and polyphenols.
