Yeast’s dual role in both producing and reabsorbing diacetyl poses the brewer with a number of headaches in controlling this frequently, but not always, undesirable and highly pungent compound. ENDOZYM® ALDC is an innovative enzyme that facilitates the swift and efficient conversion of acetolactate into acetoin, thus efficiently preventing the formation and accumulation of diacetyl in the finished beer.
Derived from a meticulously cultivated strain of Bacillus subtilis, α-acetolactate decarboxylase catalyzes the decarboxylation of α-acetolactate into acetoin and CO2, preventing the emergence of α-acetolactate outside the yeast cell where, it would normally be transformed into diacetyl by oxidative decarboxylation, were it not immediately intercepted by the enzyme.
