Endozym Aromatic has the two fold function to increase the extraction of free aromatic compounds thanks to its pectolitic activity and to act on aroma precursors thanks to its 9-glucosidasic activity. Being completely purified by the cinnamyl- estherasic activity, Endozym Aromatic can be used at high doses of utilization, being ideal for the cold maceration of white grapes.
