Proteolytic enzyme active at neutral pH
ENDOZYM® Protease NP is a neutral protease enzyme preparation obtained by submerged fermentation
of a selected strain of Bacillus subtilis.
Designed to hydrolyse proteins under neutral pH conditions, it can be used in the production of juices
and vegetable-based beverages as an additive to other enzyme preparations during maceration and
extraction to aid many aspects of possible subsequent production steps:
● Improvement of the clarifi cation process using bentonite, gelatine and silica sol.
● Increased fi ltration and ultrafi ltration effi ciency and yield.
● Improved colloidal stability of the fi nished product over time.
Enzyme preparation consisting of bacterial neutral proteases.
Optimal conditions of use:
● Temperature between 45 and 55°C.
● pH between 5 and 8.5
