Endozym Muscat is an enzymatic preparation set up for musts noticeably difficult to be clarified, deriving from Muscat, Gewürztraminer, Müller Thurgau, Malvasia and from grapes rich in extract. Endozym Muscat combines aromatic extraction with a higher ability to hydrolize ramified pectins contained in the musts of these cultivars, and gives its characteristics to the high content in pectinlyase (PL) and the contemporary presence of secondary cellulasic activities (arabinase, rhamnosidase, etc.).
