Enzymatic preparation for the stabilisation of “cloudy” citrus juices
ENDOZYM Cloudy PR is a highly concerted mixture of pectolytic enzymes that allows modifying the degree of methylation of the in-solution pectins in the cloudy concentrated juices without ever reaching their complete hydrolysis. Therefore, this process allows obtaining more stable cloudy juices and to avoid possible sedimentation.
Enzyme preparation comprising Pectinesterase (PE), Polygalacturonase (PG) and Pectin lyase (PL) of fungal origin.
